So simple, but super good. This recipe came to me based off of a pot of quinoa I had cooked the night before and a quick shopping trip to Sprouts. Sometimes the best dishes are thrown together on the fly!

This easy salad is packed with all sorts of good nutrients ranging from the amino acid profile of quinoa to the vitamin rich super pack of blueberries, strawberries and avocados. All this in one dish! Secret is with all the berries you feel like you are getting a bit of a treat even while being healthy.

This whole dish takes just minutes (once your quinoa is cooked and cooled) and can be enjoyed for days to come. Keeps well in the fridge or easy takeaway to send with you to work or even with the kiddos! Try it out like this once and then get creative. Add some other fruits and veggies to make a quinoa salad all your own.
In a large mixing bowl combine quinoa, strawberries, blueberries and avocado. In a separate bowl combine lemon juice, olive oil, honey, salt and pineapple sage and mix well. Poor over quinoa mixture. Mix. Add a couple dashes of salt as desired. Enjoy!
- 4 cups cooked and cooled red quinoa
- 1 cup chopped strawberries
- 1 cup blueberries
- 2 small, cubed avocados
- Juice from 2 Lemons
- 2 tbl spoons olive oil
- 1 tsp raw honey (optional)
- Shake of salt
- 1 sprig fresh pineapple sage
